Nutella Brownies…Mmmmmm

When I was a teenager, my best friend, Leslie, and I used to hang out in her room and read old Junior League cookbooks. In retrospect this was probably not the best use of our time. We could have spent many more hours doing whatever it is teenagers are supposed to do. And lots less time doing what middle-aged women do. Because now we’re middle-aged women, she has three kids and owns a fabulous restaurant, and I have four kids who expect dinner every single night. So, I spend a lot of time reading cookbooks.
But all the time I spend reading cookbooks? It’s searching for recipes like Nutella Brownies. Seriously. This one is easy, only uses THREE ingredients, is gluten-free, (mostly) dairy-free, and has more protein than your average brownies. 
And the taste? Fantastic. Rich and chocolatey. Baking magic that makes you never want to buy another brownie mix full of ingredients you can’t pronounce.
Because, guess what? We can all pronounce Nutella. And even though there’s been some recent debate about whether chocolate spread is a nutritious super-food (ahem….really?), it does have over 50 hazelnuts per jar. That’s not bad for the only unhealthy culprit in the recipe.

So, put the cookbooks down, here’s the recipe you’ve always wanted…

First, preheat your oven to 350. Grease an 8×8 pan. Collect your THREE ingredients: unsweetened cocoa powder, a cup and half of Nutella, and three eggs.
Separate the eggs. If you’re like me and have a few extra kids helping you, you may want to use this fun trick to separate the eggs. 

Add the cocoa and Nutella to the the egg yolks.

Start your mixer on low to beat the egg whites into soft peaks.
Move your mixer up to medium speed and let it work on the egg whites for a couple minutes.
You work on mixing together those yolks, cocoa, and Nutella. Resist eating this concoction because it will smell so good.
When your egg whites are nice and firm, fold them into the gooey, chocolately Nutella mixture.
At this point the batter will be airy and smell like some kind of Nutella, chocolate kitchen. In other words, heaven.

Pour all of this into your greased bowl.
Bake for 20 minutes. How good does your house smell right now?
They look like regular brownies! But they only have three (gluten-free) ingredients!
So, I’m into cutting these brownies into cute shapes. Mostly because I’ve been making so many batches that I need to give them away, and how cute are STAR Nutella brownies? And also because cutting up a pan of Nutella brownies means that I can eat all the leftover, awkward pieces. 
You can spread a thin layer of Nutella on top if you’re feeling these don’t already have enough hazelnut goodness…

Below is the recipe…

Nutella Brownies
Ingredients…
3 large eggs
1-1/2 cups Nutella
1/3 cup cocoa powder
1.             Heat the oven to 350 degrees F and grease an 8×8 pan.

2.             
Separate the eggs. Place the whites in a  mixing bowl and the yolks in another.

3.             Add the Nutella and cocoa powder to the egg yolks and mix until it’s evenly blended. Set aside.

4.             Whisk the egg whites at medium speed until stiff peaks form, about 2 to 3 minutes. 

5.             Fold the whipped whites into the Nutella mixture.

6.             Pour the batter into the prepared pan. 
7.             Bake in the preheated oven for about 20 minutes.
